This has become my new found veggie. It is Ash Wednesday so I decided to follow my good old tradition of soup. The soup Celery Root and Apple Soup (Epicurious.com) was recommended and I have to say it is delicious. I did omit the bacon but will definitely add it next time. What I found so amazing is that it is only 1 euro and I made a huge pot of soup. Eat that Mc Donald dollar burgers. My next quest is to try out these other recipes below.

Just yesterday, I found a yummy-looking recipe for a “celery root and fennel gratin” and mistakenly bought regular celery at the grocery store, not realizing celery root was something quite different. I will return to the store tomorrow in search of this “ugly looking yet powerful” food!
Yes it is ugly, but give it a go made a great soup with it. Probably would be a good as a chilled soup as well for summer.
